Coffee drinks are all the rage. You can swallow your calories with the artificial flavors of eggnog and gingerbread. The most offensive on the popular holiday drink circuit is pumpkin. The majority of these sugar-laced cinnamon spiced drinks do not even have real pumpkin in them. So I created a tea based pumpkin latte that contains 1/4 cup of pure pumpkin and a full cup of real infused spiced flavor.
Pumpkin Tea Latte
2 tbsp spiced infused tea (Discover Teas Le Marche Spice Flavored Black Tea is my favorite)
1 cup almond milk
1 cup water
1 tbsp honey
1/4 cup pure pumpkin
1/8 tsp cinnamon
dash grated nutmeg for garnish
2 tbsp almond milk for froth
Immersion blender or glass jar with tight lid
Bring 1 cup of water and almond milk to a low boil and add tea. Immediately turn off the heat and let it seep for 5-6 minutes. Strain the liquid into a jar or container and add the honey, pure pumpkin and cinnamon. Using a jar with a tight fitting lid or your immersion blender incorporate all the ingredients until well blended and put aside. Add the 2 tbsps of almond milk to a small jar with a lid and shake vigorously until frothy. Pour the tea mixture into a cup and top with the frothy milk. Top with a dash of nutmeg and enjoy.
