Tea Infused Bacon Waffles

Bacon and Tea Infused Waffles
There is something so satisfying about a plate of warm homemade waffles. The addition of tea and bacon takes these to a more sophisticated level. You can substitute any tea you want which makes them very versatile. They cook quickly and can also be frozen and reheated in the toaster for a weekday treat.

Makes 2 Waffles

Ingredients:
 
½ cup whole wheat pancake mix
¼ tsp salt
1 tsp baking powder
1 tbsp milk
1 egg
½ tsp cinnamon
¼ cup + 3 tbsp unsweetened apple sauce
2 tsp oil
1 tsp vanilla extract
2 bags earl grey tea (cut the bags open and use just the loose leaf tea)
4 pieces of cooked bacon chopped
 
Instructions:

  • Add all the ingredients to a bowl and mix to combine.
  • Allow the batter to sit for a few minutes to thicken.
  • Heat your waffle maker, I set mine to a 4 out of 5 for golden color.
  • When waffle maker comes to temperature spray with non-stick spray. Add half the batter starting from the middle and using a spoon spread out. Make sure you don’t go to the edge or the batter will spill out when you close. Cook according to waffle maker instructions.
  • Cook till golden brown and drizzle with some syrup and fresh fruit.
